Lemon Squares!

Lemon Squares
..........................................
1 can eaglebrand milk
12 graham crackers
½ cup lemon juice {fresh/bottled or mixed}
1 tsp grated lemon rind
1 cup lemon icing

Blend condensed milk, lemon juice and lemon rind until thick. Layer bottom of a 9 X 9 inch pan with graham crackers. Pour a layer of milk mixture over top. Continue layering milk mixture and graham crackers.
Top with lemon icing.


Lemon Icing

1/4 cup soft butter
1 cup icing sugar
1- 2 tsp lemon juice
1-2 cups icing sugar
1-2 Tbsp milk

Cream 1/4 cup butter with 1 cup icing sugar. Gradually beat in 1 - 2 tsp lemon juice to taste.
Beat in remaining icing sugar. If needed, add milk until desired consistency.
Add a few drops of yellow food coloring and mix until blended.

$6 Dollar Cookies...

1 Devils food cake mix
1 sm pkg. instant Choch pudding
2 eggs
1/4 c. water
1/2 c. oil
1/2 bag mini M&Ms

In a large bowl, mix dry ingredients. Add eggs, waer, and oil mix until well blended, stir in M&Ms. Bake at 350 for 13 minutes. Remove from oven and wait 2 minutes & then transfer to Paper towel to Cool.. NOT on a cookie rack (They will fall through)!! Make 2 dozen cookies & AMAZING!!!

White bread dough....Cinnamon Rolls & Navajo Tacos



Ok so I made more bread yesterday. and while that was rising and made more and plit the dough in 1/2 the 1st I got the rolling pin out and rolled it all out, and covered the dough with butter,brown sugar, reg. sugar, cinnamon.then rolled it up and cut about 15 cinnamon rolls out onto a greased pan, I got a picture of before they had risen then after they were cooked and frosted.

The frosting I put 2 teaspoons of vanilla, about a tablespoon of milk, tablespoon of butter and a few cups of powdered sugar just mix and keep adding until it is the thickened you want, mine was a little runny but it harden perfect on the cinnamon rolls.These were AMAZING & super easy. I let them rise and baked them for about 17 minutes so they were still soft. ENJOY!

With the other half I rolled into a ball, and let it rise and made Navajo tacos.Just fry hamburger meat up and put onions, green chilies and lots of seasoning in there and then pull about a roll size of dough and gently stretch fry them up only a few minutes on each side.Serve with refried beans, cheese, sour cream, lettuce tomato it all.And then if you eat the meat Navajo tacos...You get one with butter & jelly on it, or butter & Honey MmMm...SOOO good!

Moist Chocolate Cake & Choccolate Butter frosting

SOOO Wonderful!!!
1 c butter
1 c Water
3 (1-ounce) squares unsweetened baking chocolate
2 c flour
1 tea baking soda
1/2 tea salt
2 c sugar
2 eggs beaten
1/2 c milk
1 tea vanilla

In sm sauce pan bring butter & water to boil.Remove from heat.Place baking choch.in sm bowl in microwave for 1 min. add to butter & water.In separate bowl stir flour & baking soda.Pour choc. ingredients in & beat well.In another bowl cream sugar, & eggs.stir in milk & vanilla (beat well) Combine mixture and put into cake pan.Bake at 375 for 30 minutes.Let cool then frost.

Chocolate Butter Frosting
1/2 c butter
1/2 c milk
2 (1 ounce)square unsweetened baking choch., melted
3 1/2 c powdered sugar
In small sauce pan bring butter & milk to a boil.remove from heat all melted choc., powdered Sugar & vanilla.Beat until smooth.

Pumpkin Bars


Ingredients
Bars:
4 eggs
1 2/3 cups granulated sugar
1 cup vegetable oil
15-ounce can pumpkin
2 cups sifted all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon salt
1 teaspoon baking soda
Icing:
8-ounce package cream cheese, softened
1/2 cup butter or margarine, softened
2 cups sifted confectioners' sugar
1 teaspoon vanilla extract
Directions
Preheat the oven to 350 degrees F.

Using an electric mixer at medium speed, combine the eggs, sugar, oil and pumpkin until light and fluffy. Stir together the flour, baking powder, cinnamon, salt and baking soda. Add the dry ingredients to the pumpkin mixture and mix at low speed until thoroughly combined and the batter is smooth. Spread the batter into a greased 13 by 10-inch baking pan. Bake for 30 minutes. Let cool completely before frosting. Cut into bars.

To make the icing: Combine the cream cheese and butter in a medium bowl with an electric mixer until smooth. Add the sugar and mix at low speed until combined. Stir in the vanilla and mix again. Spread on cooled pumpkin bars.

Grandma's Homemade Cheesecake

2 packages cream cheese, softened
1 can Eagle brand sweetened condensed milk
1/4 C. lemon juice
1 tsp. vanilla
Mix above ingredients together.

Crust:
1 package graham crackers
1/2 C. Melted Butter or Marj.
1/4 C (give or take) Sugar

Crush graham crackers. Add sugar and Marj.
Press graham cracker crust into a pie tin. Refrigerate for about 15 minutes.
Pour cream cheese mixture into graham cracker crust.
Refrigerate until set.
Serve.
Top with fruit.

When I made it, I tripled the recipe and made a 9 x 13 casserole size. Which was a good thing and a bad thing.
I ate a lot of it.
And now I'm doing Pilates to make up for it.

M n' M Penutbutter Cookies

1. C. sugar
1/2 C. brown sugar
1 C. butter
2 eggs
2 teasp. vanilla
2 1/2 C. flour
1 teasp. salt
1 teasp. soda
1 teasp.milk
1/2 C. peanut butter chips
1/4 C. m n' m (i used minis)

* Add sugar, brown sugar, butter, vanilla, and milk in mixer (or large bowl) Mix flour salt and soda in separate bowl, add slowly to sugar mixture. Add chips and Mn'M's, mix lightly.
* Bake at 375 for 7-9 min.
** I added a big tablespoon of peanut butter for extra taste, they were delicious!

Cobbler

You've probably heard of this recipe, but if you haven't you need to. It's simple and delicious. You can use any fruit you like; I grab a few cans of pie filling from the store when I don't have canned peaches on hand. Last night, I had canned peaches on hand.

1 Yellow Cake Mix
2 Cans Pie Filling
1 Cube of butter or Marj.

Dump pie filling into a 9x13 pan, spread evenly. Evenly spread dry cake mix on top of fruit. Coarsely chop butter and drop over dry cake mix until it looks something like this:

Bake it at 350 for 35 minutes or until golden brown.
After making your house smell amazing, your cobbler will come out looking something like this:

Make sure you don't put a fork next to it. You'll be sorry. I know I am.

Tips:
*Do not drain the pie filling. You'll hate yourself for seventy times seven years.
*This recipe can be chopped in half and made in a 9x9 using only one can of pie filling, but don't use half of a cake mix. You'll want to slit your wrists and do a hand stand in salt water. Dump the whole bag on there. Don't be shy.
