AMAZING!!!! You dont have to do this first step, but I did not sure it is needed for next time. and we used Drumstick chicken and it tasted AWESOME!!!
Slightly brown the chicken breasts first in olive oil then set aside and do rest!
Serve with brown rice and grilled asparagus or broccoli or some other vegetable.

Ina Garten Lemon Chicken Breasts

Ingredients
1/4 cup good olive oil
3 tablespoons minced garlic (9 cloves)
1/3 cup dry white wine
1 tablespoon grated lemon zest (2 lemons)
2 tablespoons freshly squeezed lemon juice
1 1/2 teaspoons dried oregano
1 teaspoon minced fresh thyme leaves
Kosher salt and freshly ground black pepper
4 bone in chicken breasts, skin on (6 to 8 ounces each)
1 lemon

Directions
Preheat the oven to 400 degrees F.
Warm the olive oil in a small saucepan over medium-low heat, add the garlic, and cook for just 1 minute but don't allow the garlic to turn brown. Off the heat, add the white wine, lemon zest, lemon juice, oregano, thyme, and 1 teaspoon salt and pour into a 9 by 12-inch baking dish.
Pat the chicken breasts dry and place them skin side up over the sauce. Brush the chicken breasts with olive oil and sprinkle them liberally with salt and pepper. Cut the lemon in 8 wedges and tuck it among the pieces of chicken.
Bake for 30 to 40 minutes, depending on the size of the chicken breasts, until the chicken is done and the skin is lightly browned. If the chicken isn't browned enough, put it under the broiler for 2 minutes. Cover the pan tightly with aluminum foil and allow to rest for 10 minutes. Sprinkle with salt and serve hot with the pan juices.Swasey familyhttp://www.blogger.com/profile/15991268545681514717noreply@blogger.com0tag:blogger.com,1999:blog-4909438853808253792.post-65772523487990675982011-07-12T15:16:00.000-07:002011-07-12T15:24:34.339-07:00Baked Creamy Chicken Taquitos & Creamy Lime-Cilantro Ranch DressingBaked Creamy Chicken Taquitos

1/3 C (3 oz) cream cheese
1/4 C green salsa
1T fresh lime juice
1/2 t cumin
1 t chili powder
1/2 t onion powder
1/4 t granulated garlic, or garlic powder
3 T chopped cilantro
2 T sliced green onions
2 C shredded cooked chicken (for extra yumminess, use grilled taco chicken!)
1 C grated pepperjack cheese

small corn tortillas (and actually, flour ones are really good as well)
kosher salt
cooking spray

Heat oven to 425. Add chicken and cheese and combine well.

You can prepare up to this step ahead of time. Just keep the mixture in the fridge.

Work with a few tortillas at a time and heat in the microwave until they are soft enough to roll without cracking. It helps to place them between damp paper towels. Usually 20-30 seconds will do it. It stays moist for days (not that it lasts that long in our house) and my kids devour it so I know it's good :)

1 3/4 C. flour

2 teaspoons baking powder

1/4 teaspoon baking soda

1/2 teaspoon salt (I do just a little less than that)

1/2 teaspoon cinnamon

1 C. & 2 Tablespoons white sugar

1/2 C. chopped pecans (I use walnuts too)

2 eggs

2 Tablespoons sour cream ( this is what makes it so moist)

1 C. mashed bananas (2 reg. sized bananas is what I use)

1/2 C. Vegetable oil

1 teaspoon vanilla

DIRECTIONS:

1.Preheat oven to 350. Grease and flour two 8x4 in. loaf pans, or 3 mini loaf pans. Set aside.

2.Cream sugar and eggs together, add oil, vanilla, sour cream, until blended. Add bananas and mix until creamy.

3.Sift together flour, baking powder, soda, salt, and cinnamon. Add to wet ingredients until all creamy and delicious! Add nuts, but this is optional.

4.Bake for 45-55 minutes in regular loaf pans, about 25 minutes for mini loaf pans. Cool 10 minutes or so before removing from pans.

Enjoy!!

** Instead of greasing and flouring my loaf pans I grease and then do sugar and cinnamon! It makes it kinda crunchy on the outside and it's just that much better!!

** I also never sift my dry ingredients, I know I should but I never do and it turns out great.
LeVander Familyhttp://www.blogger.com/profile/18026849384283097478noreply@blogger.com0tag:blogger.com,1999:blog-4909438853808253792.post-82098764494341387622010-04-07T08:52:00.000-07:002010-04-07T09:02:59.245-07:00Eggs Florentine Casserole<img style="display:block; margin:0px auto 10px; text-align:center;cursor:pointer; cursor:hand;width: 320px; height: 213px;" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgGFg21Q6qsD_AWuptHylTsls_K3ixYwOa5XKVHz8EU0v1Zd5jGktwBh62ztetXbFL4fJ_WwaHlKzPdiDSQBttVfIGTW2aDW8Tgk3EdNopFndimuR8aFSEZqI2a-e5huhDg7XGTx-esMliv/s320/florentine500.jpg" border="0" alt=""id="BLOGGER_PHOTO_ID_5457426688327764786" />

I also made this for my Easter brunch this past weekend!I LOVED this so much!!!!It was so very easy too. Dip in beaten egg and then cornstarch. Brown lightly on both sides. In a pot, add sugar, vinegar, chicken stock, ketchup, soy sauce, and salt. Bring to a boil (until sugar is melted). Put chicken in a square, glass pan. Pour sauce over the top. Sprinkle LIGHTLY with garlic salt. Cover with tin foil. Bake @ 350 for 1 hour.

Chinese Rice:
2 tbs Olive Oil
3 Large Carrots chopped
3 Large Celery sticks chopped
1/2 an Onion Chopped
1/2 a package of bacon chopped
4 eggs
2 cups of Rice

Directions: While Rice cooks... put olive oil in large frying pan on low to medium heat (depending on your stove), add carrots, celery, and onions. Let cook until done. (Add a little soy sauce to them and other seasonings that you like...I do salt, pepper and a little garlic salt). When they are done, set them aside and fry the small bits of bacon. When bacon is done add it to the veggie mix. Then beat the eggs and scramble them in the pan (so they get the yummy bacon flavor). When the eggs are done mix it all together in a bowl. Sprinkle yeast on the warm water, mix till yeast is desolved.Add dry milk, sugar, salt, oil & 3 cups of flour and have the mixter on LOW speed until smooth (about 3 minutes). Gradually add the remaing flour.Cover & set aside for 15 minutes.I keep my oven on at 300 while gettting the dough to rise, it helps it rise faster.Knead on a floured surface until smooth, just a few minutes.Divide dough in half and shape each of them into loaf shapes, with the folds on the bottom.grease pans, cover and let rise to about 1 hour to a 1 1/2 hour!
and then bake at 400 degrees for 20 -30 minutes until crust is golden brown.And let cool in pan for a few minutes and rub the bread down with butter and then take out of pan and let cool on rack. Well they are pretty darn close I must say and I can't keep them on the wax paper long enough to cool down! Here is her recipe...
{Perfect White Chocolate Chip Cookies}
* 1 cup butter, softened
* 1 cup white sugar
* 1 cup packed brown sugar
* 2 eggs
* 2 teaspoons vanilla extract
* 3 cups all-purpose flour
* 1 teaspoon baking soda
* 2 teaspoons hot water
* 1/2 teaspoon salt
* 2 cups white chocolate chips
DIRECTIONS
Preheat oven to 350 degrees
Cream together the butter, white sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Dissolve baking soda in hot water. Add to batter along with salt. Stir in flour, chocolate chips, and nuts. Drop by large spoonfuls onto ungreased pans.
Bake for about 10 minutes in the preheated oven.

I used semi sweet chocolate chips cause it's all I had and they were delicious! I also added about a 1/2 teaspoon of Cinnamon(I always add Cinnamon to all my cookies) and I baked mine for 11 minutes instead of 10.
