Yellow Squash Bread

2 cups shredded yellow crookneck squash
1 cup vegetable oil
3 eggs
3/4 cup sour cream
1 cup sugar
1 cup white corn meal
2 cups flour
1 teasppon dried dill
1 small green onion with greens dice
1 small mild pepper ( I used serrano) diced
2 tablespoons ranch dressing
1/4 tsp garlic salt
dash pepper
1 tsp. soda
1/2 tsp. baking powder

Heat oven to 350 degrees. Prepare two loaf pans with Bakers Joy. Or just grease and flour.

Combine all wet ingredients first. Add sugar. Mix well. Add flour and corn meal to make a little mountain and then add the rest of the ingredients. Stir until well blended but not too long. It is the same theory as over mixing muffins. They won't be as fluffy. Pour into prepared pans and bake for 50 min. Each oven is different so watch your loafs. After removing from oven remove from pans and cool on a rack.
