Fried Rice

1 med. onion, diced
1 egg, well beaten
3 tbsp. butter
1 c. uncooked instant rice
Soy sauce

Melt butter. Saute onions until soft. Stir in egg briskly, cooking until egg is set. Cook instant rice according to directions, omitting butter and salt. When rice is cooked, stir it into skillet with onions and egg. Pour 1/3 cup water and 2 teaspoons soy sauce over rice. Stir and fry gently until water is gone. Add more soy sauce, if desired.
