Roasted Red Potatoes w/ Bacon and Cheese

Prep: 15 min. Total: 1hr. 10 min. Makes: 8 servings

1/2 C. ranch dressing
1/2 C. shredded Italian cheese (I always use a little more)
1/4 C. bacon bits ( real bacon is best)
2 lbs red potatoes , quartered
1 Tabl. chopped fresh parsley (or 1 teas. dried parsley)

*Preheat oven to 350 degrees. Mix dressing, cheese, and bacon bits in large bowl. Add potatoes; toss lightly. Spoon into lightly greased 13x9 baking dish, cover with foil.
*Bake 40 min. Remove foil; bake an additional 15 min. or until potatoes are tender. Sprinkle with parsley.
