Dear Muffin Makers-

I've just gotten into baking muffins! They all seem to taste pretty good but they always come out so dry! I follow the directions exactly as they say and still they come out a little more chewy than they should be or a little too dry.
Does anyone know what I can do to make them soft and moist like they should be?? I'm racking my brain over here about it and I just can't seem to get the hang of it.

    I don't make cupcakes very often--in fact I havn't made any for years--but when I want to get a little more moisture in my baked goods, I sometimes add a but of finely grated raw carrot--this probably sounds bizarre, but it is not noticeable in the flavor and it DOES add moisture. You might try it.

  2. Yogurt. I don't have it down to a science-but I do know that when I put yogurt in my muffins, they are moister and have great texture. I love using lemon yogurt in blueberry muffins. Anyway, good luck and please, share your findings!

  4. I use sour cream in all my breads and muffins. It makes everything much more moist!
